David Moss - Owner & Chef David has worked in some top local establishments and has received many culinary accolades, he trained at Longueville Manor, which, at the time was the Channel Islands only Michelin Star restaurant. The Latest establishment David worked at was 'The Crab At Chieveley' whilst there the restaurant achieved two AA Rosettes and most importantly received AA Seafood Restaurant of the year award. David has very strong links to some of the countries premier independent fish suppliers, most of which he still uses on a daily basis.
Lewis Moss - Owner & DirectorLewis has been in local business for many years and this is his first outing into the world of hospitality. Lewis is very much in control of back of house matters and is very involved in the development of the restaurant and hotel, along with his wife Diane Moss you will spot them many times in the restaurant testing the food, wine and whisky, he assures us this is part of his job description but we are not too sure!!
Carly Thompson - Restaurant ManagerCarly joined us early in 2008 and quickly found herself promoted to the position that she has excelled at over the last year. Carley runs a team of ten and is in charge of training and development to ensure the Heifer’s high standards are maintained on a daily basis. Carley is very passionate that every customer has the best dinning experience possible and the Heifer’s friendly but professional service can rival any restaurant in the country.
Paul Ransome – Duty ManagerPaul has recently joined the Heifer team after managing some very prestigious restaurants in the South of England, Paul has already been instrumental to the continuing development of the Heifer team and has many great ideas to add that little bit extra style to the dining experience.
Nicki RandallNicky has been a duty manager at the Heifer for over a year and she continues to drive standards higher thought out the restaurant and hotel. Nicky has been a key part of our Heifer training program.
John Barley - Head ChefJohn has been working at the Heifer for over five years, he was promoted to head chef in 2010 and has been integral to the development of the Heifer menu and works tirelessly to ensure the high standards of the Heifer are maintained on a Daily basis. John regularly spends his days off developing a recipe book for a local charity. John is very committed to using sustainable fish and is constantly in talks with our various fish suppliers to obtain the less well known varieties of seafood to try on the menus.
Jean 'don't you dare call me Stella' Hammond - Head HouskeeperJean has been an key part of the Heifer team since we opened in 2006 and has been paramount to the general running of the hotel and restaurant, her impeccably high standards have helped the hotel achieve its highly commended 4 star rating by the AA. Jean has a staff of four, (five including her very understanding husband Eddie who pops in occasionally to give her a hand) whose fantastic efforts help us keep the Heifer spotlessly clean.
Julie MarklowJulie joined the Heifer team in August 2012 and quickly became part of the management team. Her hard work and commitment to look after the guests has made her an integral part of the Heifer team. Julie is proud of her Scottish roots and sometimes a translator is required to understand her!!!.
Elysa Moss - Exective Chef For Children's MenuElysa, at only 5 years old, already has food knowledge well beyond her years, partially down to the fact that all her bedtime stories are read from cookery books from her fathers extensive culinary library and partially down to the fact that she lunches at the heifer most days trying to perfect the children’s menu.On a recent research trip to Thailand she perfected the ‘Cod, Prawn and Coconut Thai curry’ that showcases on the Children’s menu.
Thia Moss - The Newest Addition to The Heifer Herd Thia was born on the 16th August and already she is a regular face at the Heifer entertaining guests with her cute smile. Although her diet only consists of milk she has already been spotted eyeing up the Heifer's crispy prawns and knickerbocker glory. Thia can be spotted in the new Dales television program airing early in 2012 on her one day birthday, meeting the rest of the Heifer herd for the first time!!!
